As part of our food writing module we were told to cook one of Elizabeth David’s recipes. I chose Parmigiana (in English…..aubergine pie). Yes it sounds rather strange, aubergines are quite odd looking in a cartoon rubbery sort of way, but I have to say it actually tasted……. nice. The texture of the melted mozzarella was a bit stringy but the tomato combined with the aubergine worked well together. Perhaps use it as an accompaniment though.
